Define Celiac Disease


Celiac disease is an autoimmune condition
triggered by the intake of gluten in people
predisposed to the disease.  It is estimated to
affect 1 in 133 people in the U.S., but many
go undiagnosed.

Gluten is the protein found in wheat, barley
and rye.  When someone with celiac consumes
gluten, the immune system attacks the small
intestine, which affects the absorption of
nutrients.

There are over 300 symptoms associated with
the disease.  The only known treatment is a
strict gluten free diet. 

Celiac disease is diagnosed by a blood test, and
should be confirmed by an endoscopy.
