Define Gluten


Gluten is the name for certain types of
proteins found in wheat, barley and rye
and their derivatives.  Gluten is found
in breads, baked goods, pastas, but also
hides in foods like soy sauce, licorice
and some medications.

The following are not allowed on a
gluten free diet: wheat (durum, farina,
graham, semolina, spelt), rye, barley and
triticale.  Malt and malt vinegar may be
derived from barley and should be avoided.

The following are acceptable gluten free
grains: rice, corn, potato, tapioca, beans, sorghum,
quinoa, millet, buckwheat, arrowroot, amaranth
and teff.
