Gluten Free Pumpkin Chocolate Muffins

As the pumpkin season comes to an end, here is a great muffin receipt you can enjoy in any season.
Pumpkin is great for its color, flavor, and its vitamins.  Pumpkin contains fiber, vitamin C, and is full of carotenoids (precursor to Vitamin A).  Lets not forget how great tasting it is.  A great way to get this healthy food in, is making pumpkin muffins, of course we will add some chocolate chips.

Ingredients

2 cups of gluten free flour
1 teaspoon of baking powder
1/2 teaspoon of baking soda
1/2 teaspoon of salt
2 teaspoons of cinnamon
1/2 teaspoon of nutmeg
2 large eggs
1/2 cup vegetable oil
1 cup sugar
1 15 ounce can of pumpkin
3/4 cup mini chocolate chips

Directions
Preheat oven to 350 
Mix flour, baking powder and soda, salt, nutmeg and cinnamon
In a large bowl beat for 20-30seconds the eggs, sugar and oil
Mix in the pumpkin
Then add dry to wet mix well (don't over mix)
Finally fold in chocolate chips

Line muffin pan with liners fill half way
Bake 25-30 minutes

Let cool and enjoy!!!
