These past few weeks, my kids having been eating mangoes like crazy. We You Tubed how to pick a good one and how to cut it. When riped they are so delicious and yes gluten free. With spring coming I thought I would talk about some super fruits, including the Mango.

Last day of gluten free flours and their uses. There are so many different ones to chose from.
Just remember to try them all and see which one works with your recipe, and your taste. You can buy in bulk sometimes to save money. As with most gluten free products, the flours are double or triple in price. I use and love Bobs Red Mill flours.

Here are some gluten free flour options for cooking and baking. As I have said before, we are in an age, where there are many, many great flours available. I will list some with their uses.
1. Brown rice flour- This is a supplementary flour, and works great when mixed with buckwheat, sorghum or teff flour. It is great for cooking and works well for both sweet and savory dishes.
2. Teff flour- Teff flour is an all around great flour for baking. It has a nutty flavor and many nutrients.

Having to be gluten free today is easier then ever before, when it comes to flours. There are so many different gluten
free flours on the market, almost say too many. I could easily say I am a flour junkie. So I will go over some

Gluten Free Banana Bread
This yummy banana bread recipe I have been using for years. It can be made with gluten free flour or regular flour. Everywhere I bring this bread all love it. So here is the recipe.
Banana Bread
2 eggs 3/4 cup sugar
3 well ripped bananas 1 Tbsp. baking powder
1/4 cup milk 1/2 Tsp. baking soda
1/4 cup oil 1/4 Tsp. nutmeg
1 Tsp. vanilla 2 cups of flour
optional- add chopped walnuts or chocolate chips 1/2 cup

This is simple and easy to make, it taste just as good as regular cake.
You know being gluten free, bringing your own desert becomes routine. So keep this recipe handy when you need to

Gluten Free Chocolate Chip Cookies
There's nothing like a fresh chocolate chip cookie. Once your told you have Celiac you think the days of the yummy cookies are gone for good. These are so good, you'd never think they are gluten free. It is a simple receipt for all to enjoy. You will need to chill the dough before baking, so plan ahead if you are going to make these.

Just A Few More Things That Suck About Being Gluten Free
After writing about this yesterday there were a few more things that suck about being gluten free I wanted to mention. My son thought that this was not the type of thing to write about, but I explained it's just the truth. So here are a few more reasons.
1. Going to at least 2-3 different food stores a week. You like the bread at one, oatmeal at another and there is always one that has a better selection.
2.Being a kid or a teen, hanging with friends or simply going on a date. You need to prepare,call ahead to order, and always check what they are serving. Not being able to grab any snack at a friends house.
3. Looking at the new Oreo's that are cupcake filled, knowing you can't even try one.

Things That Suck About Being Gluten Free!
There have been some social issues that I have noticed that just make gluten free real crappy. So I will list a few and try to make light of it.
1. Going to dinner and having to watch everyone enjoy that yummy bread basket, yes free bread too.
2. One of the hardest, smelling pizza and you know you can not eat it. Even when you find a good gluten free one, it cost a small fortune and it definitely does not taste even close to regular pizza. You also have to buy a whole small pie, never 1 slice.

Some Signs Of Gluten Intolerance
There are some signs and symptoms of gluten intolerance and Celiac disease that are over looked or not thought of as a gluten intolerance. I will list a few of them.

Day 7 Of 7 Favorite Healthy Foods And Snacks
The food I will write about today is the baked, or jacked potato. This is a very common and popular food. It is naturally gluten free and when cooked has a fluffy inside with crisp skin.
A medium baked potato is about 160 calories with 4 grams of fiber, protein and less than .01 gram of fat.
Potatoes contain antioxidants including vitamin C, carotenoids, and anthocyanins. Potatoes are a good source of vitamin B6, which is a nutrient that plays a role in carbohydrate and protein metabolism. They are also high in potassium, and magnesium, with no fat.

Today the healthy food is turnip greens, they are naturally gluten free and contain Vitamin K, fiber and Calcium. Turnip greens provides one of the highest calcium contents per gram of any fruit or vegetable. They can be added to an omelet or can be sautéed in olive oil and seasoned with pepper and salt. There are many ways to enjoy them.
They are an excellent source of vitamin C, vitamin E, beta carotene and manganese. They are bitter in taste due to in part of the high calcium content. They are low in calories and have several health benefits.

With the Super bowl tomorrow, here is a healthy low calorie, gluten free snack. Everyone remembers from childhood this oldie but good snack called ants on a log. It's made with celery sticks, peanut butter or almond butter, and raisins or trail mix.
Cut the celery in half, spread on butter of your choice, top with raisins, trail mix or mini chocolate chips. Easy to make and a good for you snack, one all can enjoy.

Today I will tell you why quinoa should be a staple in everyone's kitchen. Quinoa is treated as a grain, when actually it is a seed and is naturally gluten free. Quinoa cooks pretty quick and can easily replace rice or pasta during any meal of the week. One cup cooked provides 8 grams of protein and 5 grams of fiber, making it very nutritional. Spaghetti squash is available throughout the year. It has increased in popularity over the years. It is a winter squash, lower in calories, carbs and is a gluten free alternative to pasta or noodles.
