Day 2 Of 3 Gluten Free Flours

Here are some gluten free flour options for cooking and baking.  As I have said before, we are in an age, where there are many, many great flours available.  I will list some with their uses.

1. Brown rice flour- This is a supplementary flour, and works great when mixed with buckwheat, sorghum or teff flour.  It is great for cooking and works well for both sweet and savory dishes.

2. Teff flour- Teff flour is an all around great flour for baking.  It has a nutty flavor and many nutrients. 

3. Buckwheat flour- This is an ideal gluten free alternative for any cakes, muffins, and cookies. It is by far a healthier choice of flour.

4. Almond flour-  This is a great choice for baking.  It is made from ground almonds, and lower in carbs.  When added to recipes it adds moisture, helps with binding and adds density to muffins and cookies. 

5.  Coconut flour- It is a delicious, healthy alternative to wheat and other grain flours.  It is ground from dried, defatted coconut meat, it is high in fiber and low in digestible carbohydrates. 
It is extraordinarily absorbent and very little is needed in a recipe. The ratio is 1/4 to 1/3 cup coconut flour to 1 cup grain based flour.  It is a bit difficult to cook with and needs special attention.
