With many gluten free flours on the market, people with Celiac can still enjoy homemade treats like blueberry muffins. It's easy to make from scratch.
Ingredients
2 cups of gluten free all purpose flour
3/4 cup sugar
2 Tsp. baking powder
1 Tsp. xanthan gum
1 stick of melted butter
2 eggs
1 Tsp. vanilla
11/2 cups blueberries ( if you want use chocolate chips instead)
Preheat oven 375
Stir flour sugar baking powder and xanthan gum together
Whisk egg, butter and vanilla
Stir together then fold in blueberries or chocolate chips Do not over mix.
Pour into greased muffin pan 3/4 filled
Cook for 10-15 minutes or until golden brown.
Cool and enjoy!
