Eggs And Kale
Ingredients
2 Tbs. butter
4 green onions chopped
2 garlic cloves, minced
2 bunches kale chopped
1 cup chicken or vegetable broth
1/2 tsp. salt
1/4 tsp. black pepper
Juice of 1 lemon
Directions
1. Melt butter in frying pan
2. Add green onions and garlic for 1 minute
3. Add half of the kale and sauté, stir for 2 minutes
4. Stir in lemon juice simmer for about 6 minutes
5. Using the back of a spoon, create a pocket for each
egg in the kale. Crack 1 egg into each pocket. Reduce
heat to medium low and season eggs with salt and pepper
6. Cover the pan and let the eggs cook until almost opaque
7. Turn off the heat and let the eggs rest, covered, until
done to taste.
