Celiac And The Gluten Free Diet


Gluten free diets are all the rage, however the
condition that has led many people to adopt
the diet isn't well known.
It is called Celiac disease and it's a condition that
an estimated 3 million Americans suffer from.

The condition is an autoimmune disease that causes
the body to have a negative reaction after the ingestion
of gluten.  It interferes with the absorption of  nutrients
from food, causing a number of unpleasant symptoms.

Gluten is a protein that is found in wheat, rye, and barley.
It is found in foods like bread, cake, pizza, pasta, cookies,
and dressings.  These foods are off limits, unless they
are made gluten free.
