What Is Gluten?


Gluten is a general name for the proteins
that are found in wheat, rye, barley and triticale.
Gluten helps foods maintain their shape, acting
as glue to hold the food together.  Gluten can be
found in many types of foods, even some
you may not expect.

The big three are wheat, rye and barley.  Wheat
is common in breads, baked goods, pasta, cereals,
dressings and sauces.
Barley is found in malt, barley flour, milkshakes,
malt syrup, malt vinegar, and malt flavoring. 
It is also found in food coloring, soups, beer and
brewer's yeast.
Rye is found in bread, rye beer and cereals.
Triticale is a newer grain found in breads, pastas,
and cereals.
