number one googled diet.  Trendy it is for
sure. 
If you have Celiac disease, eating gluten
free will save your life.  If you are other
wise healthy, there is no evidence that eating
gluten free is good for you.

So now you have Celiac disease, you are
not sure what to eat.  Look up your local
support group, and meet with a Registered
Dietitian that specializes in the disease.

Over time it will get easier and easier to
adapt to your new lifestyle.  It just takes
some work and time in the beginning.

There are many naturally gluten free foods,
that you already enjoy.  As I always say if
you are not sure, do not eat it.

About Celiac Disease


Celiac disease is an immune reaction to
ingesting gluten.  Gluten is a protein found
in wheat, barley, and rye.

Over time, the immune reaction to eating
gluten creates inflammation that damages
the small intestine's lining, leading to
medical problems.  It prevents the absorption
of many nutrients.

Chocolate Peanut Butter Balls


Here is a great chocolate peanut
butter recipe.  It is easy and gluten
free.

Chocolate peanut butter balls

Ingredients

1 stick of butter softened
3 cups of confectioners sugar
3/4  cup of peanut butter
1 tsp. vanilla extract
1/2 cup of M and M's
Melting chocolate about 16 ounces

Directions


1. Line a baking sheet with wax paper
2. Beat butter, peanut butter, vanilla until
creamy
3. Add the confectioners' sugar and beat
on low till mixed
4. Add in the  M and M's with a spoon
or use clean hands.
5. Make small balls and chill in refrigerator
for 1 hour
6. Melt chocolate in double boiler and dip
each one and place on wax paper.  Sprinkle
if you want.  Allow to set till chocolate is
hard. 
Enjoy they are my favorite!!!
