Coconut Flour
Coconut flour is a great replacement to
wheat and white flour. It is high in fiber
and healthy fats, great for a lower carb diet,
or vegan.
Coconut flour is low on the glycemic index.
This means it will not spike blood sugar levels.
It is high in fiber, and has healthy MUFA fat
content.
Coconut flour tastes great in cookies, cakes,
and any type of muffins. It is a flour to try for
sure. Here is a great recipe to try.
Coconut Chocolate Chip Cookies
Ingredients.
1/2 cup canola oil or melted butter
3/4 cup sugar or coconut sugar
4 eggs
1/2 cup coconut flour
1 tsp. vanilla
2 cups coconut flakes
1/2 cup chocolate chips
Directions
Preheat oven to 375
Mix eggs, sugar, oil or butter, vanilla
Add flour and flakes and mix
Add chips and mix
Roll dough into balls and place on baking sheet
Sprinkle some coconut flakes on top
Bake for 15-18 minutes.
