What Is Celiac Disease?

Celiac is know as an autoimmune disease
that affects more than 100,000 people each
year.  An estimated 1 in 133 Americans or
1% of the population has Celiac disease and
83% of Americans who have celiac are either
undiagnosed or misdiagnosed.  Most people
wait for up to 10 years to be correctly diagnosed.

Celiac disease is when the body has an immune
reaction to eating gluten.  Gluten is a protein
found in wheat, rye and barley.  Over time if
consumed, damage is done to the small intestines
and nutrients are not being absorbed.
