Lets agree on this, gluten free baked goods sometimes
get a bad wrap. It can be challenging to make something
gluten free taste like it isn't. Once you know what you
are doing, baking without gluten will come easy.
Here are a few tips to help you achieve great tasting
gluten free foods.
1. There is power in flour. You will need to try out
some different mixes to achieve your goal.
2. Gluten free baked goods fall apart a lot. When making
pancakes, cookies or muffins make them small. They do
not have the binding agents that gluten has.
3. Cook at a lower temperature. The gluten free flours are
made different and tend to burn easier.
4. Use gums. You will need to find a substitute for the
elasticity that gluten naturally provides. This can be
found in xantham gum or gelatin.
If your new to gluten free, you might be overwhelmed with
all of the options for recipes out there, but once you
find a good resource use it. The more recipes you try,
the more confident you will get.
